About Philippe Chatelain and Ghislain Gaille
Starting his career in 1981 as apprentice at Patisserie Laboue Gravesen, Philippe Chatelain has worked as pastry chef in various restaurants and patisseries since then. He has been awarded many medals. He still lives in Nice and is an advisor to the Giraudi Group in Monaco. In 1993, Chatelain was awarded the designation Meilleur Ouvrier de France Patissier, which is a certificate of perfection awarded since 1924 to only 11 people so far in the field of pastry. Chefs that qualify for the Meilleur Ouvrier de France (MOF) designation after numerous stages and a challenging process wear the stripes of the French flag on their collars.
Ghislain Gaille started in the profession with a training on pastry in France. After working as pastry chef at a restaurant in France for two years, Ghislain Gaille travelled to different places like Singapore, Baku, the Bahamas and Athens, and worked in hotels there. Gaille was the pastry chef of the Four Seasons Bosphorus for 11 years between 2005-2016.
