Fine French Pastry: Vakko Patisserie Petit Four...

The patisserie culture that brings people together for a cup of tea or coffee and perhaps a slice of cake around the world owes its existence to the 14th century. Having shaped social life in their community for centuries, patisseries maintain their culture today by offering more than a gastronomical experience.

Born from the idea of becoming part of this fine culture, Vakko Patisserie Petit Four opens the doors to a brand-new world not only with the taste it offers but also with its elegant atmosphere. Vakko Patisserie Petit Four, which was opened at Vakko Akmerkez to introduce real French artisan baking to Turkey, is the result of a long and meticulous endeavor. The delicious recipes of Vakko Patisserie Petit Four are prepared by Pastry Chef Ghislain Gaille with Philippe Chatelain, who owns the title “Meilleur Ouvrier de France Patissier” (MOF) that is awarded in the field of gastronomy in France and is considered an indicator of perfection around the world, as advisor. While the scrumptious sandwiches and salads bear the signature of French Chef Anthony Baudet, the addictive coffees of Vakko Coffee, one more special than the other, spring to life in the hands of experienced Italian Barista Steve Salomoni.

Vakko Patisserie Petit Four serves a diligently assembled selection for the different times of the day… While you might prefer to have Vakko Coffee, a blend prepared in Italy with coffee beans collected from Brazil, Columbia, Ethiopia, Kilimanjaro and India, to go with your warm croissants for breakfast, at lunch time, you might treat yourself to the elegantly served delicious sandwiches, salads, or soups prepared according to special recipes. However, the most eagerly awaited hour of the day at Vakko Patisserie Petit Four is “Teatime” that will be held every day of the week between 15:00-18:00… You can enjoy a pleasant afternoon sipping the original teas of Vakko Tea Atelier, your Vakko Coffee or champagne that accompany the little petits fours prepared à la française.

Vakko Patisserie Petit Four will leave a lingering taste in palates and memories with its very special delicacies and elegant presentation.

About Philippe Chatelain and Ghislain Gaille

Starting his career in 1981 as apprentice at Patisserie Laboue Gravesen, Philippe Chatelain has worked as pastry chef in various restaurants and patisseries since then. He has been awarded many medals. He still lives in Nice and is an advisor to the Giraudi Group in Monaco. In 1993, Chatelain was awarded the designation Meilleur Ouvrier de France Patissier, which is a certificate of perfection awarded since 1924 to only 11 people so far in the field of pastry. Chefs that qualify for the Meilleur Ouvrier de France (MOF) designation after numerous stages and a challenging process wear the stripes of the French flag on their collars.

Ghislain Gaille started in the profession with a training on pastry in France. After working as pastry chef at a restaurant in France for two years, Ghislain Gaille travelled to different places like Singapore, Baku, the Bahamas and Athens, and worked in hotels there. Gaille was the pastry chef of the Four Seasons Bosphorus for 11 years between 2005-2016.
